What happens when your other half goes out and does the supermarket run?
He comes back with twenty four free range eggs of course! So this week I have had a baking frenzy much to the older two children's pleasure.
First there was chocolate brownies from 'The River Cottage Family Cookbook'...
...then cheese scones from 'Afternoon Tea'
Tuesday night it was plain old English pancakes for pudding - sorry no pictures because as soon as I flipped them the children were queuing, arms outstretched waiting for the next one!...
...and last night 'burnt butter cupcakes' from Nigella's 'Domestic Goddess' cookbook, these went in a flash as all members of the family - apart from 'moi' dived in before I could even ice them! I have to say when I did get a look in (they left me two!) they were absolutely scrummie! (would that be classified as one of my made up words? spell check thinks so, for me that is cool!) I'm thinking out with the plain old cupcakes and in with 'burnt butter' ones from now on and maybe with a toffee topping if I get chance to ice them next time!.
Tonight, well I might make a 'May Day' chocolate cake, that's after more pancakes for breakfast, omelette's for lunch and then ham, egg and chips for dinner! Maybe, just maybe all the eggs will be used up come this weekend and if not it's a pavlova! Teach me to send the hubby shopping - I'm all egged out!

Just caught up with your last three lovely posts. The dollie is gorgeous, she already looks very loved.
Egg mountain made me laugh. When we got our hens last year we suddenly had four every day. I have now finally got my new recipe ideas sorted and sell the overflow. It does mean I make more baking effort which is also very yummy. I'll look up those burnt buns.

That doll is just lovely Nina and I bet she will be so very loved. Know what you mean about eggs; our hens and ducks are in full lay, so its a constant round of baking and caking. have a good day xx

Well done on making it through your eggy challenge and so deliciously too!! Those burnt butter brown sugar cupcakes are divine aren't they, don't think they even need the icing. I used to make them regularly before I got head over heels with the sewing again...oops!
Spellcheck thinks half my post is wrong wrong wrong so I don't bother with it anymore!

I often end up with too many eggs too! I buy 6 at the shop and Luca comes home with a bag of 12 from his uncles chickens.
My favourite egg dinner is:
chop up lots of tiny cubes of potatos and put them in a saucepan with some olive oil. Toss them for 5 mins, then add some chopped onion adn bacon and rosemary. Cook till potatoes are soft, add a few cherry tomatoes then top with a poached egg. Yumm!
if I did all that scrummie (love that word) baking after having too many eggs my hubby would buy 2 dozen eggs EVERY week. xxx

When I have too many eggs I make fritatta for dinner, you can use at least 6, even 8 eggs for one of those, and it's scrummy too.

Nina, I just wanted you to know how much you are torturing me over the sea here. I mean, my mouth is totally watering for some of those luscious baked goodies! By the way, your little girlie is such a cutie-pie and I love the little rag doll you made her!

Mmmm, that all looks so delicious! My parents sometimes pass on their excess eggs to us which I always gratefully accept as I love an excuse to have a bit of a baking session. The trouble is, cakes never seem to last very long in this house....
