
It must be true - I've been sneezing away like a trooper these past couple of days!
Anyhoo, this past week our kitchen has turned into a mass production zone with pots bubbling, popping and fermenting all over the place on any available workspace and the heady smell of sherbet is wafting in the air tickling your nose as you inhale.
Yep - it's that time of year again.

~ Elderflower Fizz ~
The contents of Grolsh bottles have been consumed and saved, flower heads are being foraged, lemons sliced, water is being boiled and sugar dissolving.
Then comes the concocting, stirring and cackling - it does look a bit like a witches kitchen at the moment - are all being throw together.............with brewers precision, naturally.

Of course the odd pot will be reserved for cordial, but we've found from our previous preserving adventures, it's the fizz that really hits the pop! And the spot.

If you have only one thing on your list to have a go at this Summer and you are confident in the 'know how' then it has to be elderflower fizz 'or' champagne as it's more widely known. Just don't hang around too long - those scrummy flower heads fade fast.
Or if you've given it ago before and it all went horribly wrong - go on, try again.......you know you want to.

actually those bottles are no joke.. I had a ginger beer bottle explode on me as I took it out of the fridge.. and cut me v v badly - from then on we only use plastic bottles for our home made beverages.
I'd make elderflower juice too if they grew here... too hot here in oz for them but we can buy the ready made bottle d stuff its lovely!

We made this last year but didn't get a fizz but a still wine, it still tastes fab though :-)
Keep wanting to give this a go every year. I've tasted it and your right it's delicious.

What I would like to know is whether the champagne is alcoholic? I agree with you it is delicious, but I never quite know what sort of alcohol content it has!

I've had such intentions to use the elder flower this year as I missed out last year but somehow it just hasn't happened! I even picked a bunch but buggered it up! Plus I keep getting confused. There are some flowers with big leaves which smell right and then some with small leaves which I'm not sure about... fizz could be a more fun experiment compared to cordial too. Will have a look at the recipe! xxx
